The Prashad Awards – How we’re challenging ourselves to make our food, service and team work even better!

Thursday, 19th June, 2014

The Prashad team is one big family (even the ones who aren’t actually related!) and we think that’s why we consistently deliver such good service to our customers. We’re always coming up with new ways of challenging ourselves to make our food, service and team work even better so we recently introduced the Prashad awards for front of house and kitchen staff. They’ve already become a fixture of our week that we look forward to – and, like anything important to us, we wanted to share it with you!

Our Operations Director Bobby’s idea was that internal awards would encourage the team to recognise greatness within itself, so it was really important that they were inclusive and represented everyone’s views. To that end, we don’t just have one employee of the week – we have four! Plus you can’t just put someone’s name forward; with every nomination there must be a reason for it, which is great as we’ve all really been focusing on each other’s positives.  So far, the most recognised qualities have been politeness, respect towards others, and happiness – as well as the much-appreciated ability to quickly step into a missing member of staff’s shoes when they can’t be here!

Recipe testing for the second Prashad Indian Vegetarian Cookbook by Kaushy Patel!

Thursday, 29th May, 2014

Hey Foodies,

As you may have seen on Facebook and Twitter over the last few weeks (you haven’t? Quick, look at this delicious photo!) we have been recipe testing for our latest exciting venture – Kaushy’s second Prashad cookbook! It’s going to be released in Spring 2015, but we’re just so excited we wanted to start telling you all about it now.

After the fantastic success of Prashad Indian Vegetarian Cooking (published by Saltyard Books in September 2012), the focus of the second book will be on authentic home-cooking, with dishes that are a little quicker and easier than the restaurant versions. Kaushy’s been working her culinary magic on classic snacks and quick meals with a Gujarati twist, which, as her family, we were lucky enough to enjoy growing up in the Patel household – such as the World’s Best Cheese on Toast!

The book is even going to feature a fusion section! Our Operations Director Bobby couldn’t have described it any better when he said Kaushy will be “wandering into other countries and creating her own, delicious, vegetarian versions of their classic dishes”. You can look forward to our take on Italian (did you see the picture of the homemade pizza we put on Facebook?!), Mexican, and Chinese, as well as lots more Indian cuisine.

Heston’s great British food focuses on curry (and some familiar faces)!

Friday, 9th May, 2014

Heston Blumenthal has got to be one of our Head Chef Minal’s favourite celebrity chefs (after Gordon of course!). She loves his passion for the science behind food and his determination to create dishes that are never anything short of perfect in their taste and presentation.

In his new series ‘Heston’s Great British Food‘, Blumenthal starts with a focus on his favourite cuisine – curry. And what better place to visit to make the best British curry than Bradford; the Curry Capital of the UK.

Back in February, he came to film the episode in the World Herigate village of Saltaire – and we got the chance to go along! Mayur and Marko, owners of our sister company Bundobust (a craft beer bar with Indian street food kitchen launching in Leeds city centre soon) were invited along to do the enviable job of being Heston’s tasters (lucky non-vegetarians!), while the front of house team from Prashad were brought in for last minute supporting in serving up Heston’s food to the standard it deserved.

Maity, Bundobust’s star chef, along with Bobby, was drafted in to make a mammoth batch of the perfect naan breads with vitamin C and enzymes to make them as light and bubbly as possibly for as long as possible. After a few false starts, they were ready just in time to hit the tables fresh and hot. The pressure was really on but the tasters said they were mind blowing!

How we changed a customer’s life with our vegetarian cuisine

Monday, 19th August, 2013

At Prashad, we receive so much wonderful feedback from our customers and readers of our cookbook on a weekly basis that it is often overwhelming. It is this engagement with our customers that keeps us so passionate and enthused about what we do, always striving to be the best we can be. However, one recent email was so impactful that we felt it deserved reproducing here on our blog. It is from a lady who has been through a life changing experience thanks to our vegetarian cuisine and it is a truly inspirational journey which we hope will inspire others as it has done us. We’ll let you read her story for yourselves…

“Hello,

I felt that I wanted to contact you and let you know how Prashad has changed my life.  I know that sounds very dramatic, but it’s absolutely true, and I will tell you why.
