A look back on #CommunityChaat

Back in April, we launched a little scheme here at Prashad called #CommunityChaat. The idea was to encourage our customers to donate a little bit extra with their lockdown takeaway orders so we could pass it on to the people in our community in the form of free food.

And you know what? Loads of you did.

We’re really thankful for how everyone came together to help us through lockdown, both in ordering our food for yourselves from our takeaway menu, and in making donations and nominations to help us feed our community.

Now that our primary focus is back on the restaurant for the time being as we try and return to something approaching normal and welcome you all back to Prashad, we’ve had to wind down the #CommunityChaat project for the time being.

It’s not gone away forever – we loved how it brought people together and helped us build some stronger bonds in our own community. We’ll definitely be having another chat with you all when we’re ready for more chaat.

As for now, let’s just take a little look back…

You made it happen

Through April and May, we raised over £1,700 in donations – and we used that cash to prepare and deliver 350 free meals to key workers and frontline staff nominated by you – our loyal and generous customers.

Who did we feed? Well, we delivered to a lot of people, including:

  • Marie Curie Hospice, Bradford
  • The Hollybank Trust
  • Bradford Midwives
  • St. Luke’s Hospital
  • Bradford Ambulance Services
  • Fieldhead Court Care Home
  • Families and carers
  • …and even our local bin men!

A community restaurant

At Prashad, we’ve always been proud to be part of the community, going all the way back to Kaushy and Mohan’s first shop and café hidden away in Bradford. We’re always absolutely delighted when customers from the old days stop in to visit, and we’re so incredibly grateful for the worldwide community of Prashad fans that we’ve been able to grow over the years.

#CommunityChaat felt like the perfect way to celebrate the core ethos of Prashad that started with Kaushy all those years ago – she never could resist handing out a free treat or two.

Thank you so much for all of your support, both in #CommunityChaat and with your lockdown orders and bookings.

Prashad is more than a restaurant. It’s a family, a community, a way of life.

Celebrating Mother’s Day: the mums that make Prashad

We have a lot to celebrate this Mother’s Day. After all, Prashad was inspired by and built off the passion and dedication of hard-working mothers. From mother to daughter, generation to generation, the love of cooking for others has been passed down through our family – along with a lot of the recipes we still serve in the restaurant today!

It’s the perfect time to cast our minds back and share some stories from the early days of Prashad. Hope you don’t mind indulging us…

Generations of family values

For Kaushy, food has always been a way to express real love. Inspired by her grandmother, with whom she lived as a child, Kaushy discovered the delights of cooking at a very young age. Rising early to prepare the family meal, her grandmother would encourage and coach her before seeing her off to school.

Kaushy learned so much about the art of cooking from her grandma, from the importance of fresh, quality ingredients to the magic of cooking from the heart.

So, when the time came to say goodbye to life in Pardi and travel to England, Kaushy was naturally nervous. But bolstered by her grandma’s unwavering belief in her, she seized the opportunity and took a leap of faith.

The early days

Kaushy and Mohan married in 1968 and moved to Bradford. Cooking for friends and their growing family helped Kaushy feel closer to her grandma and her Gujarati roots. But when Kaushy acquired her local deli, little did she know it would shape her family for generations.

Generous, warm and welcoming, Kaushy forged lasting relationships with her customers and delighted in sharing her homecooked creations with the local community. She became a beloved fixture of our old corner of Bradford – people still remind her of the times when they’d pop in with their parents at the weekend as children, and Kaushy would give out handmade Indian sweets. Some of them are still regulars in the restaurant.

Nothing brought Kaushy as much pride as seeing customers enjoy her food and watching her little deli flourish. With gentle persuasion from her kids, Bobby, Hina and Mayur (co-owner of Bundobust), Kaushy and Mohan introduced a few tables and chairs into the deli – and the café was born!

Growing as a family and a business

In 2004, a family marriage brought another equally passionate chef into the fold. Minal fit so perfectly into the Patel family, it seemed like it was meant to be. Minal has always had a passion for food! Her childhood was spent collecting recipes and cooking for her family and village community, taught by her own mother back in Gujarat.

So, when Minal and Bobby married in 2004, it seemed only natural for Minal to continue nurturing her passion for cooking with Kaushy at her side. The two women made an excellent team – Kaushy’s experience paired with Minal’s creativity took the family business to new heights, with three generations of heritage, recipes and culinary secrets across two different families to draw from.

When Kaushy won the South Asian Chef Competition in 2005, the deli and café was flooded with restaurant critics all eager to taste what made Prashad so special. Five years later, renowned chef Gordon Ramsay paid the little café a visit – and the rest is history!

Taking Prashad to the next level

New opportunities presented themselves at every turn, including the chance for Minal to train at Gordon Ramsay’s restaurant in London and for Prashad to move to larger premises. The restaurant’s popularity surged, and it was time to move on from the little deli-café that had been Kaushy’s baby (alongside her actual babies, now grown up!) for so long.

Leaving the deli and café behind was a hard decision, but it also felt right. Times were changing! Kaushy drew on all the happy memories from her time behind the counter to deliver the same welcoming and warm service that people had come to appreciate when visiting the deli-café – bringing the new Prashad restaurant to life.

Preserving Prashad values

With Minal taking on more responsibility in the kitchen, Kaushy had more time to relish her time with valued customers who have become close friends. Throughout this, Mohan was the anchor – the ultimate sous chef, providing consistency in the kitchen through the transition, supporting the head chef, and freeing up time for culinary creativity! Minal was in her element.

Since handing over the reigns in the Prashad kitchen to Minal, Kaushy has been able to travel the world, spend more time with the family and enjoy extended trips back home.

Minal and the Prashad team have preserved the same values that Kaushy and Mohan poured into their deli-café. Sharing food is our way of maintaining relationships with our community. Customers are welcomed in with a smile and served only the freshest, finest-quality dishes – just like Kaushy’s grandmother taught her.

Mother to daughter

Now, with Maitri – Bobby and Minal’s daughter – starting to help out in the kitchen at home, Minal is eager to pass on her love of food. Maitri knows her dad loves a healthy salad and is eager to get stuck in – but can occasionally get overzealous with the ingredients, making more of a… let’s say work of art than an edible dish.

Still, Maitri is always welcome in the kitchen, and her parents just know she’ll grow up to have an amazing way with food – but they also want her to seek out her own passion and not feel pressured to follow in her mother and grandmother’s footsteps. Maybe she’ll leave her own mark on Prashad, maybe she’ll do something else altogether. Either way, we can’t wait to find out.

A gift that keeps on giving

#InternationalWomensDay – Kaushy

Friday, 3rd March, 2017

For many years before the days of Prashad, Kaushy was a housewife focused on providing an amazing environment for her children to grow up in.

Cooking for neighbours, ensuring her house was perfect and organising sleepovers all became second nature. To this day she is still very house proud and spends a lot of time making sure everything is just as she wants.

Going back a few years now, an opportunity came up to buy the local deli and with the support of husband Mohan they decided to change things a little… well a lot. They acquired the deli and set about sharing their warmth through food, the deli became a hotspot for the surrounding Indian community. Kaushy forged warm relationships with all of her customers and quite often customers would pop in just for a chat.

She would always give the kids Indian sweets when they visited and even today I will meet people who will draw back to that memory.

Her family and caring attitude flowed throughout Prashad and customers quickly became friends. Prashad’s world and personality stemmed from Kaushy, over a 12 year period through her amazing cooking and people nature she laid strong foundations for future success.

#InternationalWomensDay – Minal

Friday, 3rd March, 2017

Minal was born to have a special and fruitful bond with food…

After marrying Bobby in 2004, she packed her possessions and moved over to the UK to live with Bobby and his family, from the day she got off the plane it was a very steep learning curve. Some of which is down to coming from a world which was slower and simpler, and in some ways much more peaceful than ours.

Minal is strong, determined and focused but always remains calm and avoids any potential conflict. Growing up she remembers cutting out recipes featured in her local newspaper, going home and making it straight away following an age old custom of sharing with the rest of the village. This would set off a chain reaction of cooking for neighbours allowing her to be in her element.

Imagine her excitement after finding out what Bobby’s family do for a living! From the day she first entered Prashad’s kitchen, it seemed like there was a new light shining through. She was quick off the mark to learn from Kaushy and equally so to share her knowledge. Hara Bara kebab was the first dish she introduced to the restaurant and its a firm customer favourite.

Monday, 10th October, 2016

We’re absolutely thrilled to announce that we have retained our Bib Gourmand status in the Michelin Guide 2017 – one of only 3 restaurants in Yorkshire to hold this prestigious accolade.

This year’s ratings were revealed at the beginning of last week in London. The Bib Gourmand is award to those restaurants which offer “exceptional good food at moderate prices”.

We are one of 11 restaurants in the Leeds area to feature in the Michelin Guide alongside our sister restaurant Bundobust; which is co-owned by Managing Director, Bobby Patel’s brother Mayur. A huge congratulations goes to them, who are also opening another restaurant in Manchester in upcoming weeks.

The other restaurants awarded in Leeds include Crafthouse, Tharavadu, Ox Club, Angelica, Cross Keys, Brasserie Forty 4, Fourth Floor at Harvey Nichols, Foundry and The Man Behind the Curtain. Congratulations to you all.

We would also like to take a minute to thank everyone involved with Prashad, whether you’re a supplier, member of staff or customer your input and custom is highly valued and appreciated. We wouldn’t be in the position we are now without you.

2014 – The Year of Real Food in Yorkshire!

Thursday, 9th January, 2014

2014 is going to be a huge year for our home county of Yorkshire, UK. After recently making it into international lists of Places to Visit in 2014, we’re hosting the Tour de France’s Grand Depart and now Leeds is considering putting in a bid for European Capital of Culture. And of course the region’s amazing food festivals are set to be even bigger and better, especially with the new addition of the Best of Yorkshire Food Show.

Throughout all of this excitement, we’re sure one thing will remain constant: the incredible food available in Yorkshire! There’s no doubt that it has become a real foodie destination in recent years, and that doesn’t look likely to change any time soon.  With all that’s going on this year, the buzz around Yorkshire food looks set to grow: so let’s make this year all about real, authentic, quality food that is as culturally diverse as Yorkshire people!

We’ve also noticed that in the aftermath of the horsemeat scandal, people are becoming more discerning about the food (and in particular meat) that they eat. They want to know where their food has come from and to consume it in as natural form as possible. However, fresh, organic meat that has been reared in pleasant conditions can be expensive – too expensive to become a consistent lifestyle change for lots of people. So we’re pleased to see that many people are making it their New Year’s Resolution to go vegetarian/vegan for January, for a day a week or for good. It shows a real recognition that the myth that vegetarian cuisine is tasteless and boring is finally dying out!

Locally Sourced Ingredients

Where we can we are certainly keen to look locally, and this is for everything ranging from vegetables to wines. We love working with and buying locally, we feel it provides us with a much more connected and healthy business as well as helping us to establish relationships within our community.

Minal works with local farmers and growers to produce an array of unusual yet tasty vegetables, she loves serving her purple carrot halva and is always garnishing her dishes with edible flowers.

We are very lucky to have our own personal local grower, and Minal will cook anything that the grower brings to the restaurant. Minal also loves working with DeliFresh, they supply us with the very best locally grown British vegetables.

Earlier in the year, we continued to establish new partnerships our latest one with herb and edible flower specialist; Herbs Unlimited based in Thirsk, North Yorkshire. They have over 45 herbs and 10 edible flowers across 90 acres – providing us with the perfect opportunity to bring a touch of Yorkshire to our traditional Indian recipes.

We are fortunate to be located within the Rhubarb triangle, Minal and Saif create various seasonal twists like Rhubarb Lassi and a fantastic Rhubarb relish for our pickle trays. She loves steaming Chard parcels, and eagerly awaits the beetroot season.

Looking after the small business community is our individual responsibility, we are a small business that benefits from local customers. We like to feed that revenue back to our local economy and don’t cut out the middleman, the middleman is our customer!

We post regular updates about getting our locally sourced ingredients and our ever growing relationships within our community on our Facebook page.
